Grilled Dungeness Crab and Brie Brioche

Grilled Dungeness Crab and Brie Brioche paired with McWatters Chardonnay 2011

A simple and delicious canape for entertaining by Local Lounge and Grille Chef Paul Cecconi. The richness of the crab and brie pairs beautifully with the depth and elegance of the McWatters Chardonnay.

Ingredients
- 4 slices brioche sandwich bread
- 5 oz Dungeness crab(pick out the cartilage)
- 4 oz brie cheese, sliced ¼” thick
- ¼ cup red onion sliced very thin
- ¼ cup cream cheese, whipped
- ½ cup butter, softened
Method
- Spread half the butter on all slices of bread.
- Spread the cream cheese on just 2 slices of bread
- Place the red onion on top of the bread with cream cheese and top with crab
- Place remaining slices of brioche on top, butter the outsides and panfry in a med-hot pan til golden brown.
- Cut into 4 pieces and serve with fresh salad of arugula and shredded apple.
- Serve with McWatters Collection Chardonnay.
